Thats perfect I was thinking of trying some sort of multi meter as well. I was thinking of the ceramic tubes. My concern is accidentally breaking those thats why I was thinking of a sacrificial stainless steel tube. Or perhaps a tube to protect the ceramic tube ?

Wow thermowells are hundreds of dollars. Cant a person just make one using a length of stainless tube ? Its just to protect the probe and keep the temp consistent at the probe is it not ?
