the k720 (90MnCrV8) is a high carbon steel. the handle is not strawberry ..... Italian is called the root of corbezzolo. is a hardwood that is found only in the Mediterranean forest. look here;) http://it.wikipedia.org/wiki/Arbutus_unedo
